Don't worry about the official specs , they are just guide lines , the processor can work with any DDR3 model with a speed of up to 2000MHz .. the sweet spot for Core i7 would be 1333MHz though , the gain in performance is very tiny once you go up from that speed.
The motherboard that you have chosen is a very good board .. it's true it doesn't support SLI , but that's only important if you are planning to use more than one graphics card from Nvidia .. that motherboard also overclocks very well .. in fact all of X58 chipsets have a nice overclocking potential
